Cream Of Tomato Soup

Ingredients

  • 2 ounces | Land O Lakes® Butter
  • 2 ounces | Shallots, minced
  • 1 tablespoon | Tomato paste
  • 16 ounces | Unsalted chicken stock or water

Preparation

STEP 1

Melt butter in stockpot. Add shallots and tomato paste; cook, stirring occasionally, until shallots are softened. Add chicken stock and tomatoes with juice. Cover and bring to a boil. Reduce heat and simmer 10 minutes.

STEP 2

Purée mixture with immersion blender. Add Cream Sauce Base and salt. Heat to 165°F.
