Chilled Pasta Salad with Sweet Sriracha Chile Sauce

Yield: 16 servings | Serving Size: 1.5 cups
Child Nutrition: 1 meat/meat alternate, 2 oz. eq. grain, 1/2 vegetable (other)

Ingredients

  • 4 cups (16 ounces) | Snow peas, blanched, sliced in half
  • 3 cups (24 ounces) | Matchstick carrots
  • 1 cup (8 ounces) | Red bell pepper, diced
  • | Green onion, optional

Preparation

STEP 1

Cook pasta according to manufacture directions, drain, set aside.

STEP 2

Combine cheese sauce, chile sauce, sriracha sauce in steam table pan. Cover.
CCP: Heat to 165˚F for 15 seconds.

STEP 3

Blanch snow peas and chill.

STEP 4

Combine pasta with cheese sauce, and vegetables.

STEP 5

Cool to 70°F within 2 hours and to 41°F or lower within an additional 4 hours.
CCP: Maintain cold food at 41°F or below

STEP 6

Portion 1 1/2 cups chilled pasta salad into serving bowl, to go container or bento box.

STEP 7

Top with green onions, if desired.

STEP 8

Chilled pasta salad can be stored refrigerated for up to 3 days.
