Preparation
STEP 1
In heavy stockpot or kettle, melt butter until sizzling.
STEP 2
Add onions, sauté until soft.
STEP 3
Add all remaining ingredients except broccoli and hot pepper sauce. Cook, stirring occasionally, until potatoes are tender.
STEP 4
Add broccoli and hot pepper sauce.
STEP 5
Continue heating until soup is heated through to 165°F for 15 seconds.
CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above
