Black Bean Soup

Ingredients

  • 1 cup | Onion, chopped
  • 1 cup | Celery, chopped
  • 1 (#10) can (62 ounces drained weight) | Black beans, rinsed, drained
  • 2 (# 2 1/2) cans (28 ounces drained weight) | Canned petite diced tomatoes, thoroughly drained
  • 12 ounces | Canned green chiles, diced
  • 32 ounces (1 quart) | Water

Preparation

STEP 1

Spray large, heavy stockpot with nonstick cooking spray; heat onion and celery mixture until soft (3 to 4 minutes).

STEP 2

Add half of the beans (3 cups), all tomatoes, green chiles and water. Using a food processor or stick blender, process mixture until smooth.

STEP 3

Add remaining beans, Ultimate White Cheese Sauce, cilantro, cumin, pepper and water. Stir to combine. Continue heating over low heat, stirring occasionally until heated through.  Heat to 165°F for 15 seconds. Serve with dollop of light sour cream and chopped parsley or cilantro, if desired.
