Corn Soup With Grilled Lobster

This recipe is made with corn on the cob steeped in cream. It won't separate when held hot.

Yield: 6 cups of soup
Portion: 12 (4-ounce) servings

  • 6 (6-ounce) cobs | Frozen, corn on the cob, thawed
  • 24 ounces | Cream Sauce Base
  • 24 ounces | Milk
  • 1 teaspoon | Lobster base
  • 1/4 teaspoon | Lemon juice
  • To taste | Cayenne
  • To taste | Salt
  • To taste | Pepper
  • 6 ounces | Lobster meat, grilled or butter poached, cut into small chunks


  1. Combine corn, Cream Sauce Base and milk in large saucepan. Bring to a boil. Simmer 15 minutes.

  2. Cut corn from cobs and return kernels to saucepan. Discard cobs. Simmer milk mixture for an additional 15 minutes. Strain mixture, press on solids.  Discard solids.

  3. Return strained milk mixture to saucepan. Add lobster base, lemon juice and cayenne pepper. Season with salt and pepper. Heat to 165°F.

  4. To serve, portion corn soup and garnish with 1-ounce lobster chunks.
