Breakfast Bagel Squares

Eggs and melted American cheese create an easy take-along sandwich.

Ingredients

Yield: 24 sandwich squares
Portion: 1 sandwich square
Child Nutrition: 1 1/2 meat/meat alternate; 2 oz. eq. grain

Preparation

  1. In large bowl, mix eggs, milk, and pepper. Pour into greased full-size hotel pan and bake at 325°F for 20 to 25 minutes until set or knife inserted in center comes out clean.

    CCP:  Heat to 165°F for 15 seconds.
    CCP: Maintain hot food at 135°F or above.

  2. Cut into 24 (3 1/4-inch) squares.

  3. Place 1 egg square on bottom half of each bagel. Top with 1 slice of American cheese. Return to oven and warm until cheese is just melted (1 to 2 minutes). Top with remaining bagel halves. Serve with toppings as desired.
